Art Class:
The art class at CEI is conducted twice a week by a professional artist, Mr. Mark Knott, in our art building. Cooking Class :
Our newest "Enrichment" activity is a basic cooking and preparation class. The class is conducted by Ms. Jenelle Hickman, a CEI volunteer, once a week at CEI. The individuals enrolled in the class participate in developing a menu, researching recipes, preparation and cleaning. Safety is a large part of the curriculum and each participant must exhibit safety percautions in order to attend. The class cooks small meals that are can be duplicated at home with regular household ingredients. This "Enrichment" class has almost double in size and is proving to be a valuable life-long learning experience for all of the individuals who chose to participate.

Computer Concepts Lab:
Last year, CEI was fortunate enough with the assistance of the community and local businesses, to establish a brand new computer lab. Computer classes are scheduled several times a day and give each individual the opportunity to access the resources within the lab. Mrs. Levy, a parent representative/volunteer, instructs the basic computer concepts to individuals interested in using these tools to navigate on the web and learn various software and programs. Each participant is supervised and all computer lessons are focused on basic computer concepts such as keyboarding, use of the mouse, and navigation. Many individuals enrolled in the computer programs enjoy listening to music and playing games on the computers. Other individuals may use the computer to improve on their skills and knowledge of technology and the online resources.
